White wine Est Est Est
The story tells that in 1111 Johannes Defuk, bishop at the court of Henry IV of Germany, was traveling to Rome to receive the crown of the Holy Roman Empire from Pope Pascal II; being a keen connoisseur of wines, he used to send forward his cup bearer, to look for and taste for him the best wines of every place they went through. They had decided that, if he had found some good wine, he would have to write on the door of the tavern EST (or C'E '), if it had been very good EST EST. When he arrived in Montefiascone, the cup-bearer was so impressed by the goodness of the local wine that he repeated the word three times, reinforcing it with several exclamation points. Est! Est!! Est!!!
